Introduction

Hummus is a food dip or spread made from cooked and mashed chickpeas, typically blended with other ingredients such as tahini, olive oil, lemon juice, salt and garlic. In Arabic, the word hummus means chickpeas. Chickpeas are also known as garbanzo beans. A majority of chickpea production in the US is used to make hummus.

In the US, hummus sales, which were negligible in the early 2000s, grew to around $650 million in 2013. Although any kind of official national sales data is not available for this industry, growth trends can be inferred from trends in US chickpea production, as displayed in chart 1 and chart 2 below.

Production of large dry chickpeas in the US grew from 374 cwt in 2003 to 2,709 cwt in 2013, representing a stellar annual growth rate of 22 percent per year. Production of small dry chickpeas in the US grew from 60 cwt in 2003 to 760 cwt in 2013, representing an even healthier annual growth rate of 29 percent per year. The smaller less popular variety, however, has seen more of an uneven albeit still upward trend in growth as can be seen from chart 2 below.
